WINE MAKING

- From the moment the grapes arrive in the cellar, they are handled gently and with respect for the fruit

- Long and gentle pneumatic pressing

- Handling of the juices in a thoughtful way without rushing the musts (by gravity or slow and gentle pumping)

- Severe settling of the must

- Yeasting, only with selected neutral yeasts

- Fermentation and maturation in demi-muids (600-liter barrels) and cigars (350-liter long barrels) on fine lees. The barrels come from the cooperage Atelier Centre France which carries out steam strapping and a meticulous choice of wood favoring the fineness of the grain by avoiding too pronounced markings of the wood.

- Dry wine

- Aged for a minimum of one year in barrels

- Racking and blending of half casks and cigars to let the wine rest for about 6 months.

- The manipulations in the cellar are reasoned, respectful, and are carried out only if necessary. This approach aims at preserving the integrity and the sensory framework naturally present in our grapes.

TASTING AT THE DOMAIN

- "This is a great wine that comes from an early terroir with a southern exposure. Its limestone soil and exposure give the wine a strong character that is both dense and voluptuous. On the Domaine, the terroir of Les Bouffants is divided into two parts. The first part (Haut de Bouffants for 75% of the parcel) is located on the top of the hillside with a very stony soil but with a fluid and supple earth that works extremely well. The second part (Pente de Bouffants for 25% of the plot) is a steep slope of finer and softer limestone called Griottes. The maturation is faster there with always golden grapes and a lower yield. Like "Côte de l'épée" for the Damocles vintage, "Les Bouffants" is one of the mythical sites of the Sancerre appellation that we wanted to isolate to highlight another facet of the diversity of our parcel" Domaine Denisot.
