- Presentation : The Allegory vintage is made from our Chenin plots located on the place called "Les Gorys". An allegory is the representation of an abstract idea by something concrete. What could be more concrete than the Chenin grape in the white wines of Saumur? Yet the expression of taste is always abstract and very individual. This cuvée represents perfectly the complexity and the finesse of the white wines of the Loire.
- Vinification and maturation: The grapes are harvested by hand and then pressed before being placed in Burgundy rooms for fermentation and maturation for about ten months. Three types of wood are used in order to have the finest and most complex aromatic expression possible, while maintaining tension and balance. No product is added during the whole process until the bottling where a minimum of SO2 is added to guarantee the quality of the wines during the transport.
