The Vin Jaune du Domaine des Marnes Blanches is an exceptional and confidential wine. The Vin Jaune is a dry white wine produced exclusively from the Jura grape variety: Savagnin. The grapes are "sûr-muris" until the harvest, after mid-October. The wine is then matured in barrels, without having been sulphited or settled, for six years and three months. During this maturing process, the barrels are not "topped up", i.e. without the winemaker completing the part of the wine that evaporates, the famous "angels' share". This leads the wine to develop a veil of yeast on its surface, protecting it from oxidation by avoiding direct contact with the air. This veil maturing of the wine gives it a range of very specific aromas, particularly rancio, which are partly found in sherry-type wines, as well as an excellent capacity for development during ageing. Another particularity of the yellow wine is that it is bottled in clavelin: as atypical by its shape as by its capacity, the clavelin is the only container authorised for bottling. Custom-made at the request of the winegrowers in the 18th century, this unique bottle is characterised by a capacity of 62 centilitres, i.e. approximately what remains of one litre of wine after it has been aged for 6 years and 3 months.
