- Tasting notes : Originating from Dampierre sur Loire and cultivated on Turonian clay-limestone soil, Saumur Champigny Clos de l'Échelier opens with an intense and slightly toasted aroma of blue and red berries intermingled with nougat, chocolate, toasted notes, but also stony and even iodized. Subtle flavours of sweet notes and red paprika. The palate is soft, round and intense, a supple Cabernet, intense in fruit, but pure and lively. There are ripe tannins that intertwine perfectly with the saline acidity. This is a Cabernet de Champigny of great purity, freshness, finesse and grip.
TECHNICAL INFORMATION
- Grape variety : Cabernet-Franc
- Terroir : Clay and limestone known as Turonian Superior. Very little soil, about 30 to 50 cm before being directly on the rock.
- Vinification : Manual harvest in boxes, sorting table for the harvest before vatting by conveyor belt. Fermentation in truncated cone-shaped vats at a temperature of 16 to 24 degrees in order to extract the maximum of aromas and fatness; end of fermentation at a temperature of 24 degrees.
- Vatting time of 10 to 18 days, 100% de-stemming.
- Pairing: This wine will go perfectly with red meat tartar or game.
