The Ponsot wine estate, located in Morey-Saint-Denis, in Burgundy, was founded in 1872. Laurent Ponsot does not use insecticides, but does not claim the organic approach. He monitors the lunar cycles, but refuses to be considered biodynamic. On arrival in the winery, the bunches of grapes are given a little sulphur, but will not have any afterwards, neither during vinification, nor during maturing, nor even at bottling - except in the case of a specific problem.
Domaine Ponsot does not need a sorting table, preferring to sort the grapes on the vine before the pickers pass by: all bunches with defects end up on the ground. Those that are healthy are mostly destemmed. Fermentation starts when it wants and lasts as long as the yeasts want, with some punching and pumping over that Laurent Ponsot graduates according to the profile of the vintage.
