GEOLOGICAL FEATURES
Kimmeridgian subsoil is very homogeneous over the entire hillside with an assemblage of calcareous clay and white limestone pebbles resulting from the degradation of the Portlandian soil located just above.
VITICULTURE
Viticulture in integrated pest management. Soil maintenance through regular ploughing.
VINIFICATION
Pneumatic pressing. Enzymatic settling 12 to 24 hours at 15°C then fermentation in indigenous yeasts partly in stainless steel tanks and partly in barrels.
Systematic malolactic fermentation and blending after 8 to 10 months. Fining if necessary, light filtration and bottling.
TASTING / AGREEMENTS
It is the sunniest climate in Chablis, it is located due south. This warm exposure combined with a rather rich terroir gives wines that are always very opulent and very open to white fruits (pear and vine peach) but also white flowers such as the very aromatic seringat. This aromatic power and richness often masks the minerality which remains in the background during the first years. On the other hand, after 7 to 10 years, the fruit gives way to oyster shell and iodine aromas reminding the wine of its origins. It can be drunk young on its fruit with fresh raw vegetable-based starters or wait several years if you wish to match it with seafood.
