Order wine : Chablis 1er Cru Montée de Tonnerre 2023 - Jean-Paul et Benoit Droin
GEOLOGICAL FEATURES
Shallow soils resting on Kimmeridgian ochre marly limestones typical of Chablis. The stony limestone gangs contain the famous microscopic fossilized oysters: Exogyra virgula.
Veins of blue clay in some places give the wines their legendary minerality.
VITICULTURE
Viticulture in integrated pest management. Soil maintenance through regular ploughing.
VINIFICATION
Pneumatic pressing. Enzymatic settling 12 to 24 hours at 15°C then fermentation in indigenous yeasts partly in stainless steel tanks and partly in barrels.
Systematic malolactic fermentation and blending after 8 to 10 months. Fining if necessary, light filtration and bottling.
TASTING / AGREEMENTS
Its aromatic profile, fine and complete, is predominantly mineral and white fruits. There are also touches of white flowers, aniseed and menthol, brioche and sweet spices. In the mouth, its long vivacity is prolonged by its salty side. Never aggressive, it expresses itself on the oyster shell as well as on notes of flint. After 5 to 7 years, the aromatic persistence is reinforced and offers then all its power always balanced by a mineral straightness. It is after 15 years that it acquires an incomparable complexity. It is the lord of the Premiers Crus. It will be perfect with grilled lobster.
