GEOLOGICAL FEATURES
The soils are marked by a relatively gentle slope, which has allowed the sometimes massive Kimmeridgian marls to remain in place. The soils are thus deeper than on other Chablis terroirs.
VITICULTURE
Viticulture in integrated pest management. Soil maintenance through regular ploughing.
VINIFICATION
Pneumatic pressing. Enzymatic settling 12 to 24 hours at 15°C then fermentation in indigenous yeasts partly in stainless steel tanks and partly in barrels.
Systematic malolactic fermentation and blending after 8 to 10 months. Fining if necessary, light filtration and bottling.
TASTING / AGREEMENTS
The large quantity of clay from this terroir brings a lot of fatness and roundness and it is without a doubt the richest and deepest Premier Cru. It is often described as very "Burgundian" with its style richer than lively. From the first years, one finds aromas of yellow fruits, apricot but also hazelnut and grilled almond with a tasty and concentrated mouth. With time, the brioche and toasted notes appear while keeping a nice freshness in the mouth. It will go perfectly with white meats in sauce or with noble fish. If drunk with ten years or so, it will be perfect with pan-fried foie gras.
