GEOLOGICAL CHARACTERISTICS
Kimmeridgian limestone with Exogyra virgula is particularly present in the subsoil with sometimes compact slabs. On the surface, the clays are sticky and difficult to work after the rain.
VITICULTURE
Viticulture in reasoned fight. Soil maintenance by regular ploughing.
WINE MAKING
Pneumatic pressing. Enzymatic settling for 12 to 24 hours at 15°C, then fermentation with indigenous yeasts, partly in stainless steel tanks and partly in barrels.
Systematic malolactic fermentation and blending after 8 to 10 months. Fining if necessary, light filtration and bottling.
TASTING / PAIRING
Vaillons is a blend of 5 climates (Epinottes, Roncières, Séchet, Chatains and Beugnons). It is a very classic wine with notes of white flowers and iodine. Its very sunny exposure and its valley sheltered from the northern winds give it a rather early maturity allowing it to be appreciated from the first years. It does not have the usual austerity of young Chablis.
With the years, the wine loses its floral aspect in favor of tertiary aromas of menthol and oyster shell. It can be served with all seafood products but also with regional cheeses.
