GEOLOGICAL FEATURES
Poor light-colored soils resting on a limestone Kimmeridgian marl subsoil. The slope is relatively steep.
VITICULTURE
Viticulture in integrated pest management. Soil maintenance through regular ploughing.
VINIFICATION
Pneumatic pressing. Enzymatic settling 12 to 24 hours at 15°C then fermentation in indigenous yeasts partly in stainless steel tanks and partly in barrels.
Systematic malolactic fermentation and blending after 8 to 10 months. Fining if necessary, light filtration and bottling.
TASTING / AGREEMENTS
It is always the most delicate and elegant wine. The nose is very open on notes of hazelnut and grilled almond. The attack is generally supple and greedy with a certain opulence in warm years. It is a very slender, airy wine carried by a fine acidity. With time, its minerality is expressed by notes of chalk and flint with a slight salty and iodized finish.
The delicacy and purity of the Vaudésir allow it to be perfectly matched with scallops or with noble fish such as monkfish or turbot.
