GEOLOGICAL FEATURES
Above the Kimmeridgian subsoil of chalky marl lies a very clayey, fairly deep, white soil. The slope is not very steep.
VITICULTURE
Integrated viticulture. Regular ploughing to maintain the soil.
VINIFICATION
Pneumatic pressing. Enzymatic settling for 12 to 24 hours at 15°C, followed by fermentation with indigenous yeasts, partly in stainless steel vats and partly in barrels.
Malolactic fermentation is carried out systematically, followed by blending after 8 to 10 months. Fining if necessary, light filtration and bottling.
TASTING / PAIRING
This wine is always very open. Its exposure to the sun gives it a very fine maturity. The minerality is often more discreet, giving way to aromas of yellow fruit (apricot, quince).
The clay soil adds depth and length. The palate is always rounder than taut, with notes of ripe fruit. Over time, the wine becomes fresher but retains a very open, greedy style. It goes very well with prawns, poultry in sauce, or even pan-fried foie gras.
