GEOLOGICAL FEATURES
On this hillside coexist several types of soils all coming from the same Kimmeridgian. At the top, the erosion is stronger and the soils are more stony and calcareous while at the bottom they are deep and more clayey. In the middle is a strip of blue clay.
VITICULTURE
Viticulture in integrated pest management. Soil maintenance through regular ploughing.
VINIFICATION
Pneumatic pressing. Enzymatic settling 12 to 24 hours at 15°C then fermentation in indigenous yeasts partly in stainless steel tanks and partly in barrels.
Systematic malolactic fermentation and blending after 8 to 10 months. Fining if necessary, light filtration and bottling.
TASTING / AGREEMENTS
He is the lord of the Grand Crus. It gives wines of exceptional righteousness and power by its volume and intensity. It expresses a vast aromatic register with notes of ripe fruit such as peach but also oyster shell and smoky notes. The palate impresses by its freshness, power and mineral balance. We find a fine reduction carried by iodized flavors of oyster shell, lemon and flint. It is a great complex wine with an exceptional ageing potential. It will go well with all noble fish (monkfish, turbot) or with more spicy dishes such as sushi.
