GEOLOGICAL FEATURES
Kimmeridgian marl is present all over the hillside but there is a disparity between the bottom with deeper brown soil and the top with more clayey and white soil.
VITICULTURE
Viticulture in integrated pest management. Soil maintenance by regular ploughing
VINIFICATION
Pneumatic pressing. Enzymatic settling 12 to 24 hours around 15°C then fermentation with indigenous yeasts partly in stainless steel tanks and partly in barrels.
Systematic malolactic fermentation and blending after 8 to 10 months. Fining if necessary, light filtration and bottling.
TASTING / AGREEMENTS
Valmur is a very powerful, massive climate with a lot of minerality. This gives the wine an austerity and restraint that is the hallmark of the great wines of Chablis. We find yellow and white flesh fruits such as peach or apricot. In sunny years, these notes evolve towards candied fruits and quince. In cool years, floral notes such as hawthorn give the wine of this climate all its distinction. It is a great wine for laying down and it generally takes more than 10 years for the wine to decompress all its substance.
It will be perfect with white meat in sauce, lobster or matured cheeses.
