GEOLOGICAL FEATURES
Very calcareous soil with significant pebble outcrops, the Kimmeridgian mother rock being very close at the top of the plot.
VITICULTURE
Viticulture in integrated pest management. Soil maintenance through regular ploughing.
VINIFICATION
Pneumatic pressing. Enzymatic settling 12 to 24 hours at around 15°C then fermentation with indigenous yeasts in stainless steel tanks.
Systematic malolactic fermentation is carried out and then blended after 8 to 10 months. Fining if necessary, light filtration and bottling.
TASTING / AGREEMENTS
With its beautiful south-western exposure, the climate of Vosgros benefits fully from the sun. However, it takes its time to mature because it is located in a cool valley. The wines always have a flattering and pleasant texture, quite round and even fat in a hot year.
On the other hand, it takes longer for the aromas to release from this material. Often austere in the early years, it is only after 4 to 5 years that the wine takes on its full Chablisian dimension by expressing notes of oil, oyster shell or undergrowth. It can be drunk with seafood or on fish terrines.
