Cellaring potential: 2025 - 2035
- Geographical location: Two villages: Prémeaux-Prissey on clay to the east of the village and Puligny-Montrachet on clay, in the centre of the village on the east side
- Grape variety: Pinot noir
- Vines: Planted between 1969 and 2004 on a surface of 53 ares 62 in Prémeaux-Prissey and in 1968 on a total surface of 42 ares 47 in Puligny-Montrachet, for a total surface of 96 ares 09 ca
- Soil and subsoil: Clay
- Vinification: Hand-picked, passing through two sorting tables: a vibrating table and a belt table. The grapes are then destemmed or not depending on the vintage and put in truncated wooden vats. The harvest is then cooled and the vinification takes place after one week of cold maceration (at the end of the harvest). Pigeage or remontage depending on the vinification phase. They taste the wines every day and decide on the interventions to be made.
- Maturation: In a 19th century cellar. 12 months in barrels (33% new) with malolactic fermentation, then 6 months in stainless steel tanks.
- Bottling according to the lunar calendar.
- Personality: The long maturation process allows this wine to age very well. The aromas of fresh fruit are very present.
