- Geographical situation > Three plots of land :
- Le Meix Cadot (1 ha 33 ares 92 ca), parcel planted in 1978 on a clay soil. The vine is under the 1er cru Meix Cadot climate (East exposure).
- En Rosey (1 ha 08 ares 10 ca), parcel planted in 1974 on a clay-limestone terroir. The vineyard is on the plateau of Mont Varot, to the west of the Appellation (east exposure).
- Montagne de Montagne The vineyard is on the mountain of Remenot, in the North-West of the Appellation (East exposure).
- Grape Variety : Pinot noir
- Vineyards : Planted between 1974 and 1978, total surface of 2 ha 75 ares 24 ca
- Soil and subsoil: Limestone, clay and clayey limestone
- Vinification: Hand picked, passing over two sorting tables: a vibrating table and a belt table. The grapes are then de-stemmed or not depending on the vintage and put into truncated cone-shaped wooden vats. The harvest is then cooled and the vinification takes place after a week of cold maceration (at the end of the harvest). Pigeage or pumping over depending on the phase of vinification. We taste the wines every day and decide on the interventions to be made according to the tasting.
- Maturing: In 19th century cellars. 12 months in barrels (33% new) with malolactic fermentation, then 6 months in stainless steel tanks.
- Bottling : According to the lunar calendar
- Personality : The long maturation period allows this wine to age very well. The robe is concentrated and offers aromas of ripe fruits.
