The Meursault Les Chevalières is one of the best of Coche's localities. Notes of lemon oil, white flowers, marzipan and subtle nutmeg emerge from the glass. Coche has the last parcel of Chevalières, which touches Meix Chavaux.
Domaine Fabien Coche, which still sells in the UK under the Coche-Bizouard label, is one of the most underestimated estates in high-quality white Burgundy in the Côte de Beaune. Alain Coche took his time, leaving his wines on their lees to mature quietly for two winters, and produced a classic, well-balanced Meursault, which has evolved magnificently in the cellar; today, his son Fabien is following in his footsteps, with a few small refinements: today, Coche's harvest takes two weeks, not one. Each plot is brought to optimal maturity, and there are more large barrels in the cellar next to the usual Burgundy pieces. These are not stylish, flashy wines, and they are not as spectacular as some of the region's most sought-after estates when they come out, but the wisest who have the patience to cellar them will be amply rewarded.
