CHARACTERISTICS OF THE LAVAUX SAINT JACQUES CUVÉE
The Lavaux St Jacques parcel is located in the northern part of the village of Gevrey, just before the combe. The origin of the name of this climate would come from "La Val" which designated in the Middle Ages a depression of the relief, a topographic hollow. With "Les Cazetiers" and "Clos Saint-Jacques", this climat is considered as one of the 3 best Premiers Crus of Gevrey. The Domaine acquired this parcel at the end of 2013.

VINIFICATION & MATURING
The grapes are cut and sorted by hand. The proportions of de-stemming and whole grapes vary according to each vintage. A daily punching of the cap is done to extract color, tannins and aromas from the grapes. After 19 days of vatting, the alcoholic fermentation is completed. The free-run wine is drained by gravity while a slow and gentle pressing of the marc allows to obtain a press wine of great purity. For 16 months, our wines are aged in French oak barrels (40 to 50% of which are new and 50 to 60% of which are two-wine barrels) in our cellars with a natural and constant hygrometry and temperature. These barrels are selected for the fineness of their grain and their moderate toasting.
TASTING
The color is deep ruby. This wine offers a beautiful intense nose of small black fruits. It is a powerful, warm, concentrated wine with a remarkable aromatic intensity. Its tannins are pleasant and the finish is persistent with notes of leather.
