Grape Variety : Chardonnay

Location : This cuvée is composed of 2 plots which summarize alone the diversity of the soils of Fuissé. One is present on the acid soils of the primary era, the second, looking east, is enclosed in the middle of the most robust Pouilly-Fuissé.

Age of the vines: 30 years for one, 20 years for the other.

Soil : The first one, gently sloping, is located on the rocks coming from volcanic-sedimentary sandstone; the second one, on the east exposed part of the amphitheater of Fuissé, is at the top of the residual tongue of clay with chailles, just above the place called "Les Perrières".

Vinification : Fermentation and maturing take place in stainless steel tanks on total lees first and then on fine lees.

Tasting : Very elegant wine, with floral aromas and a pure mouth harmoniously underlining the Chardonnay grape variety.

Food pairing: It will go well with fish such as trout, skate, halibut.

However it will also be the ideal companion of aperitifs between friends.
