VINEYARD CULTURE
The vineyard is managed biodynamically. No chemical plant protection products are used. The soil is ploughed. Melliferous and nematicidal plants are sown in the rows. The preparations used come only from transformed plant, animal and mineral materials.
SOILS
The soil is composed of clay and coarse flint elements. The subsoil is made up of Tuffeau, a soft, white limestone rock through which the roots create a passage.
VINIFICATION
After pressing, alcoholic fermentation is carried out by indigenous yeasts in demi-muids, wooden rooms with a capacity of 600 litres. It can last up to six months. Malolactic fermentation" is not sought. Foam is produced in our cellars. The bottles remain on laths for a minimum of 12 months.
