The grape variety used for this wine is Chenin Blanc, also known as Pineau de Loire.
The vines are grown according to biodynamic principles.No chemical pesticides are used. Instead, melliferous plants, nematicides or cereals are sown between the rows of vines. The preparations used are derived exclusively from carefully processed plant, animal and mineral materials.
The soils are composed of clay mixed with fragments of flint. The subsoil, meanwhile, is made up of Tuffeau, a soft, white limestone rock that allows the roots to penetrate deep into the soil.
Vinification begins with pressing, followed by alcoholic fermentation using indigenous yeasts in demi-muids, 620-liter wooden barrels. This process can last up to six months. Malolactic fermentation is not sought for this wine. Aging then continues on fine lees, still in demi-muids.
