Located in the western part of the Sancerre appellation, Chavignol has a unique terroir called "terres blanches". The region is essentially a limestone plateau (the same vein as Chablis) with clay and limestone soils. The highest vineyards, "Monts Damnés", "Grande Côte" and "Les Culs de Beaujeu", are perched on incredibly steep slopes with very little topsoil.
Harvesting is generally manual and very late, as pushing the maturity to the extreme is an element that gives these wines their heavy texture and complexity. Although Cotat is not certified organic, its practices are more or less in line with the principles of organic agriculture. It does not treat its vines with pesticides, uses only native yeasts for fermentation and follows the lunar cycle for racking. The wines are fermented in older demi-muids and aged in larger barrels. All wines are unfined and unfiltered.
