TASTING AT THE DOMAIN
From a granitic soil in the commune of Chavanay, this wine is aptly named: dark color and black fruits remind us of the ink lands. These 30 year old Syrah vines already have the crispness, the spicy texture and the roundness typical of the red wines of the Northern Rhône Valley.
TECHNICAL INFORMATION
- Appellation : Saint-Joseph
- Grape variety : 100 % Syrah
- Average age of the vines : 30 years
- Plantation density : 7 000 vines per hectare
- Vineyard management : The narrow and sloping vines are mostly worked with a caterpillar. When mechanization is impossible we use the winch or pickaxe.
- Certified : Organic Agriculture (Ecocert) / Passages of biodynamic preparations (Compost de bouse Maria Thun, 500, 501)
- Places : Vessettes, Ribaudy (Commune of Chavanay, north of the appellation)
- Pruning : Cordon du Royat
- Harvest : Manual, at full maturity in 20kg boxes.
- Vinification : In stainless steel tanks, 100% destemmed grapes. Vatting period of 2 to 3 weeks with light manual punching down and pumping over (depending on the tasting)
- Aging : 12 months - In barrels, without new wood
- Cellaring : To be drunk between 3 and 8 years.
