Gigondas 2015 " Hominis Fides " - Chateau de St Cosme
-
Very old Grenache planted on Miocene limestone sands in a place called "Hominis Fides".whole harvest. Aged for twelve months: 20% in new pieces - 50% in pieces of one wine - 30% in pieces of two and three wines.
This is a place that will love the bio-dynamic compost that we are fermenting. Indeed, if the Miocene sands are great soils, they are nevertheless poor in organic matter and sometimes lack physical structure. Usually, Hominis Fides gives wines that are a little softer than Claux. But in years like 2015, maturity brings the depth that characterizes this terroir, without losing finesse. If Hominis Fides is essentially planted with Grenache, we also find all sorts of old grape varieties, some of which are even unknown to me. My grandfather always made his replacements with different grape varieties. The diversity in the same vine favours a better flowering: in the case of Grenache which usually flowers rather badly, the interest of this practice is obvious. Who knows, perhaps this diversity also contributes to the complexity and balance of the wine? Hominis Fides 2015 will of course be a
great wine for laying down: we will therefore have to make the effort to keep these bottles carefully, even if they already taste quite civilized... In spring 2016, we planted clairette in Hominis Fides: a massal selection of the Post. We will be able to vinify two rooms: more or less the same as the Poste. In three years you will be able to taste the "white" version of Hominis Fides.
Let's trust the terroir.
Pepper, truffle, graphite, smoke. Bottled without filtration.
