A hermitage, or ermitage or l'hermitage, is a wine d'appellation d'origine contrôlée produced in the communes of Tain-l'Hermitage, Crozes-Hermitage and Larnage, in the Drôme department. The surface area is 123 ha and the average production is 3,500 hl. The producers of this appellation have brought their wine up-to-date. It's the end of these fat and alcoholic wines which used to go to Bordeaux or Burgundy to boost a local production a little low in alcohol and structure. The ageing capacity of Hermitage wines is extraordinary, some vintages can reach their peak after 30 years, both red and white. Among the best plots in Hermitage, we will pay particular attention to these: Hermitage Le Pavillon, Hermitage Les Bessards, Hermitage Le Meal and Hermitage Les Dionnieres. The Hermitage Blanc have a low acidity, and reveal notes of spices, almond, honey and flowers. The red Hermitage is opulent and structured, with notes of black fruits and spices. They gain finesse with age. Apart from Guigal, omnipresent in the region, the productions of Paul Jaboulet, Chapoutier, Marc Sorrel, Jean-Louis Chave, Domaine Belle, Delas and Domaine Ferraton are favoured.
