Rivesaltes 1976 - Cuvée Aimé CAZES
GRAPE VARIETIES
80% grenache blanc, 20% grenache noir.
TERROIR
Clay and limestone with rolled pebbles from the foothills of the Corbières.
VINIFICATION
Direct pressing. Settling of the must, fermentation at 18°C.
Fortification with neutral alcohol in liquid phase during fermentation.
ABV: 15 % Alc/Vol, Residual
sugars: 116 g/litre.
AGEING
22 years in old oak foudres to cause its oxidation. There is an evaporation of 7% per year, so more than 2/3 of the volume at the end of its ageing. After bottling, conservation in an air-conditioned cellar.
COMMENTS
This exceptional wine is dedicated to Aimé Cazes, father of André and Bernard Cazes, who showed them how to make great natural sweet wines. Time has done its work. It has been enriched with multiple aromas: green walnut, bitter orange, fig, dried apricot, cinnamon, nutmeg, cardamom... flavours that linger in an atmosphere of fatness and smoothness. It will open out in a large glass at a temperature of 15°, preferably with foie gras, oriental spice desserts or a choice Habano.
