Hubert Lamy has been a winegrowing family in Saint-Aubin since 1640, and set up his estate in 1973 with 9 hectares.A new winery was built in 1980 and extended in 2002.His son Olivier joined him in 1998. The estate now cultivates 18.5 hectares, including 10.8 hectares of Premier Cru in the communes of Saint-Aubin, Puligny-Montrachet, Chassagne-Montrachet and Santenay. Winemaker: Olivier LAMY.

Geology: Deep clay soil. East-south-east exposure. Surface area: 1.05 hectares.

Grape variety: Pinot Noir. Age: planted in 1950 5% slope. Altitude: 220 metres. Planting density: 11,000 vines per hectare.

Origin: This parcel may have belonged to the Goujon family or been worked by them.

Viticulture :Guyot and Royat cordon pruning (to obtain smaller grapes). Green pruning in May and August. No fertiliser has been used for 10 years, but organic compost-based soil improvers are used. Low yield. High trellising (1.5 metres) for greater leaf surface area and to aerate the bunches. The soil is ploughed about 4 times a year. The entire estate is treated with low doses of natural products such as sulphur or copper, or with "lutte raisonnée" (treatment with products that respect the existing fauna and are only applied when necessary).

Vinification: Hand-picked in bins or crates. Grapes are sorted and 30% destemmed, 70% whole crop.

Fermentation and maceration for around 20 days. Pigeage and remontage are carried out twice a day. No chaptalisation. Wines put into barrels (Vosges and Allier, 20% new and barrels 1, 2 wines), as the wood must not dominate the wine.

Ageing the wine: The cellar is cold, so the wines age very slowly. MLF in barrels. Racked in October (the wines are pushed through with compressed air, so they are never pumped). The wines are fined with eggs. Bottled by gravity after 23 months of ageing.

Tasting notes: Attractive dark ruby colour. Nose of fresh black fruit. Rich and fat on the palate with ripe tannins.

Ageing potential: Drink between 2026 and 2033+.
