Family of winegrowers in Saint Aubin since 1640. Hubert created his estate in 1973 with 9 ha. A new vat room was built in 1980 and enlarged in 2002. Olivier, his son joined him in 1998. The Domaine now operates 18.5 ha including 10.8 ha in premier crus in the communes of Saint Aubin, Puligny Montrachet, Chassagne Montrachet and Santenay .
Tasting note: Black bigarreau color of beautiful intensity and great depth. Fine nose revealing aromas of ripe grapes, blackcurrant jelly and wild blackberry, enhanced by noble woody notes. Pure, suave and melted on the palate, developing on fatty and dense tannins, mixed with concentrated substance. Long and balanced finish.
Possibility of evolution: To drink between 2026 and 2035.

- Winemaker: Olivier LAMY Grape variety: Pinot Noir 30% slope. Altitude of 320 meters.
- Area: 1 Hectares Ages: 50 and 60 year old vines Density: 11,000 vines/ha
- Origin: The vines are planted on a hillside behind the Edouard family house. The EDOUARD family lived here in the 19th century in front of these vineyards.
- Geology: Clay-limestone soil, predominantly limestone. Light soil. Lots of stones. East-South-East exposure
- Viticulture: Cordon de Royat pruning (to have smaller grapes). Pruning in green in May and August. No fertilizer for 10 years but amendments based on organic compost are made. Grassing the middle of the row, more work of the soil under the feet. Low yield. High trellising (1.4 meters) for a larger leaf surface area. The entire area is treated with low doses of natural products, sulfur or copper or with sustainable control (treatment with products that respect existing wildlife and are only applied when necessary). .The soil is plowed approximately 4 times a year.
- Vinification: Manual harvest in bins or crates. Grapes sorted then destemmed at 30% and 70% whole harvest. Fermentation and maceration for approximately 20 days. Punching down and pumping over are done twice a day. Little Chaptalization. Wines put in barrels (Vosges and Allier, 20% new and 1, 2 year old barrels).
- Aging of the wine: The cellar is cold, hence the wines evolve very slowly. FML in barrels. Racked in October (the wines are pushed with compressed air so never pumped). The wines are not fined. Bottled (by gravity) after 23 months of aging.
