TECHNICAL SHEET
- VARIETY & AREA: 100% Pinot Noir with white juice on a 1.17 hectare plot. Pinot Noir brings finesse, elegance and complexity to the wines of this region.
- TERROIR: Beautiful plot overlooking the suburbs of Beaune.
- Clay-limestone soil with a predominance of strands (small pebbles) and sand. The silica contained in the latter promotes heat and light, guarantees of maturity. The wines are recognizable by their fine and fruity sides.
- VINIFICATION & AGING: The grapes are harvested by hand in small boxes then are sorted and completely destemmed. Vatting lasted 17 days at controlled temperature in open wooden vats. We carry out punching down twice a day during the alcoholic fermentation. Malolactic fermentation is carried out 100%. Aging is done 100% in oak barrels.
- Duration of breeding: 18 months
