- Tasted in 2015 by Luis Gutiérrez: ‘Château Chalon 2007 was bottled in two batches, as it always has been. Laurent Macle therefore tries to blend the wines so that they are as similar as possible. However, it is impossible to differentiate between the bottles, as the label does not indicate the batch. In any case, the nose is explosive and complex, with powerful aromas of morels, green walnuts and perhaps a touch of rancidity; there are also spices, curry and cardamom. The palate is both lively and voluminous, full-bodied with good acidity, making you salivate and leaving a salty taste on your lips. This is a fresh vintage with plenty of acidity; it's a lively wine that will age well. The wine is very young, but already complex and with great depth. It is absolutely magnificent. Laurent Macle was kind enough to uncork a 1976, which was a very different vintage - a very warm vintage that still seems young (with levels of complexity that are not comparable), so imagine how long the 2007 could age. These are wines that age forever. Just read the label: Vin de Garde. Patience will be rewarded. I tasted the best yellow wines together when I got home, and this one clearly stood out as the wine of the vintage, a wine that should improve with time in bottle, but which is so greedy that it's almost impossible to resist it now. At this price, it has to be one of the least expensive great wines in the world.’
