- Grape variety: 100% Chardonnay

- For Jean-Marc, the most important thing is to make the most of the terroir he inherited. The soil is worked by ploughing throughout the year, while organic matter inputs are adjusted to the specific needs of the vines.
- Pruning in March, trellising, leaf thinning, green harvesting and manual harvesting are all practices that guarantee exceptional grapes, essential to the production of great wines.
- Once harvested, the whole bunches of Chardonnay are sent directly to the pneumatic press. The juice is then matured in oak barrels (30% of which are new) for 12 months, before spending 6 months in stainless steel vats.
- The Pinot Noir grapes are sorted and destemmed before being placed in vats.
