Historically, this cuvée was called "Tradition", a name chosen in the 1970s by Pierre's parents. "Latitude" was chosen to better characterise this cuvée with its roundness and rich, charming style. It is composed exclusively of Chardonnays always coming from the same "latitude": the south of Vertus. A generous terroir and grapes picked at full maturity: the Latitude cuvée is the festive champagne par excellence while keeping the purity characteristic of the estate's champagnes. Non-vintage, this cuvée contains 40% of wines from the estate's perpetual reserve, started in 2004.

BREEDING
The grapes are gently pressed and the juice very lightly settled and then directly put into barrels. The natural alcoholic fermentation (indigenous yeasts) and malolactic fermentation start spontaneously in the barrels and Stockinger tuns. The wines are aged on natural lees for the first year without filtration or fining.
Blending and bottling take place in July. The bottles are taken down into the coolness of the cellars where the second fermentation and ageing on slats take place for at least 2 more years. Each bottle is manually disgorged 6 months before marketing. The dosage is only 4g/l (extra raw!).
