Les Chemins d'Avise Grand Cru 2015 Extra-Brut - Larmandier-Bernier
ORIGIN
They complement the singular champagnes (mono-cru). This approach began in 1988 with Vieille Vigne de Cramant, then completed in 1995 by Terre de Vertus and in 1999 by Rosé de Saignée. Pierre and Sophie have known for a long time that the Avize terroir deserved a singular cuvée. It was in 2009, thanks to the acquisition of a smaller press, that these 2 parcels were isolated. They are located in the heart of the village of Avize on the so-called "Chemin de Plivot" and "Chemin de Flavigny". Here the soil is very poor, the chalk is on the surface. The vines, 50 years old, draw delicate floral characters and a unique mineral density.

BREEDING
The grapes are gently pressed and the juice very lightly settled and then directly put into barrels. The natural alcoholic fermentation (indigenous yeasts) and malolactic fermentation start spontaneously in the barrels and Stockinger tuns. The wines are aged on natural lees for the first year without filtration or fining. The bottles are taken down into the coolness of the cellars where the second fermentation and ageing on slats take place for at least 5 more years. Each bottle is manually disgorged 6 months before marketing. The dosage is only 2g/l (extra raw).

This wine calls for a great dish such as a delicately roasted lobster.
