Tasted by William Kelley: "Delivering aromas of citrus, custard, crisp orchard fruit and freshly baked bread. A chalky, incisive style, with concentrated fruit, racy acids and a lovely, spiky mousse. Ending with a long, saline finish, it's more chiselled than its Latitude counterpart and represents a welcome step upmarket."
ORIGIN
Historically this cuvée was known as "Blanc de Blancs" since the beginning of the 20th century. "Longitude" comes exclusively from our Chardonnay from the Côte des Blancs: Vertus, Oger, Avize, Cramant which form a line close to the 4th meridian. Not a vintage, this cuvée contains 40% of wines from the estate's perpetual reserve, which was started in 2004.

BREEDING
The grapes are gently pressed and the juice very lightly settled and then directly put into barrels. The natural alcoholic fermentation (indigenous yeasts) and malolactic fermentation start spontaneously in the barrels and Stockinger tuns. The wines are aged on natural lees for the first year without filtration or fining. Blending and bottling take place in July. The bottles are taken down into the coolness of the cellars where the second fermentation and ageing on slats take place quietly for at least 2 more years. Each bottle is manually disgorged 6 months before marketing. The dosage is only 3g/l (extra raw!).
