Tasting by Stephan Reinhardt on October 14, 2021: "Baudouin's Coteaux du Layon 1896 2018 is a problematic wine because this sweet wine has the year in its name, and a "natural" wine in 1896 in Rablay sur Layon was a wine with no added sugar. At that time, some winegrowers of the Coteaux du Layon decided to found the "Syndicat des Antisucreurs" based on the principle that wine should be based only on the grape. The debate was very lively between the partisans of the "sucrage" and the minority which opposed it, and the "anti-sugar" point of view did not prevail in the practices and the regulation of the 20th century. The mellow Layon is Patrick's true passion, and his 1896 shows the fascination of this once fashionable category of wine. Golden white in color and with pure, refreshing mineral notes on the nose, this 12% alcohol Chenin is elegant, round and stimulatingly spicy, like a digestible botrytized Auslese from Germany but richer, more powerful and with more tannin. Fermented and aged in small oak barrels with a first sulfiting at first racking and a second adjustment at bottling, this is an excellent, full-bodied and very stimulating Layon that was fermented with natural yeasts and certainly without chaptalization. The finish is long, intense and saline and reveals good tension and digestible sweetness (99 grams per liter)."
