Tasting by Stephan Reinhardt in 2021: "Pabiot's 2018 Pouilly Fumé Florilège offers an intense, concentrated, fresh and slightly flinty/chalky bouquet with delicate over-layered aromas. On the palate, this is a full-bodied, quite rich, warm, mouth-filling Pouilly with remarkably smooth acidity and a round, lush, aromatic finish. The wine reflects the warmth of the vintage but is neither brandy nor bitter. The 2018 Florilège is one of the best wines in the appellation."
- Presentation : The Florilège cuvée is made from a blend of older parcels from all the different terroirs of the estate: limestone, clay-limestone and flint. The wine is matured in concrete and stainless steel tanks on the lees for 12 to 14 months.
