- Tasting : La Folie is a Saumur Champigny coming from fresh terroirs in the village of Champigny. Aged in wooden vats, it is a cuvée carried by red fruits and freshness, with a remarkable length. A fresh red wine, dynamic and greedy at the same time.
- To be served with : La Folie is the ideal companion for summer meals, going well with charcuterie and white meats. As winter arrives, La Folie grows in size and is the ideal companion of fish such as red mullet and also fresh cheeses such as our Loire goats.
- Origin : 1st vintage in 2007, La Folie is the name of one of the parcels that make up this vintage.

- Grape variety : Cabernet Franc
- Terroir : Clay-limestone on lacustrine limestone or "Pierre de Champigny" in the village of Champigny. Era : Eocene ludian.
- Plots : 7 plots : Les Mouchards, Les Chalonges, Les Gagneries, Le Vigneau, Clos Linthier, La Maisonnette and La Noue
- Age of the vines : From 15 to 50 years old
- Yield : 39 hl / ha
- Vinification: Maceration in 50hl concrete tanks, without yeast for 3 weeks. One tank was vinified in whole bunches to bring elegance to this very rich vintage.
- Maturing : Malolactic fermentation and maturing for 8 months in wooden truncated cone vats
- Bottling : May 2021, fruit day and rising moon.
- Alcohol content : 13,5%.

- Cultivation: Organic. Manual soil work, no chemical weeding, no synthetic products, ECOCERT certification since 2007
