GEOGRAPHICAL SITUATION
The Beaune vineyard, located between Savigny les Beaune to the north and Pommard to the south, is the most extensive in the Côte de Beaune. There are no Grands Crus in this commune, but 36 Premiers Crus.
CHARACTERISTICS
The vineyard of Beaune is almost totally situated on the slope, and therefore benefits from a large classification of its climates as Premiers Crus, such as Les Chouacheux, from the old French "Sausseux" where the willows grow. They are located just below the vignes franches at an altitude of about 230 meters.
VINIFICATION AND MATURATION
The grapes, characterized by very black berries, are destemmed and vinified in open vats for about 4 weeks, thus fully revealing all the subtlety of this terroir. After devatting, the wines are placed in oak barrels in our cellars and aged for 18 months.
