GEOGRAPHICAL LOCATION
Chablis is the northernmost part of Burgundy halfway between Dijon and Paris. The vineyard represents 3,500 hectares of which 856 hectares are Premiers and Grands Crus. The Premiers Crus represent 20% of the total volume of Premiers Crus in Burgundy. There are 40 different climates classified as Premier Cru, such as Montée de Tonnerre.
CHARACTERISTICS
This region has a continental climate (very cold in winter and hot in summer with frosts in spring). The soils are marly and give a unique character to the wines of Chablis.
VINIFICATION AND MATURATION
After a soft pressing, a part of the juice is fermented in double rooms of 456 liters. Another part is vinified and aged in stainless steel tanks. The ageing lasts from 13 to 15 months on fine lees before the preparation of the bottling.
