GEOGRAPHICAL SITUATION
Gevrey Chambertin is a commune located in the North of the Côte de Nuits. It has 26 Premier Crus and 8 Grand Crus.
CHARACTERISTICS
The soils are calcareous with a good proportion of clayey marl giving the wines roundness and power as well as more or less depth.
VINIFICATION AND MATURATION
The grapes are harvested manually in small crates in order to preserve the integrity of the fruit. The grapes are then carefully sorted by hand and destemmed. Maceration of the grapes takes place in open wooden or stainless steel vats for 3 to 4 weeks. The vats are pumped over twice a day during the fermentation. The wine is aged for about 18 months in barrels from our cooperage, of which about a third are new.
