GEOGRAPHICAL SITUATION
The most recent A.O.C. in Burgundy (1987), promoted to the rank of communal appellation, belongs to the prestigious vineyards of the Côte de Nuits, whose doors it opens to the immediate south of Dijon. Marsannay is the only village whose appellation covers red, rosé and white wines.
CHARACTERISTICS
This vineyard is exposed to the East and South, on fairly gentle slopes between 260 and 320 m. The soils are dark brown, dry, of limestone-marl-clay composition, with pebbles and gravels favouring good natural drainage.
VINIFICATION AND MATURATION
The grapes are harvested by hand in small crates in order to preserve the integrity of the fruit. The grapes are then carefully sorted by hand and destemmed. Maceration of the grapes takes place in open wooden or stainless steel vats for 3 to 4 weeks. The vats are pumped over twice a day during fermentation. The wine is matured for about 18 months in barrels from our cooperage, about a third of which are new.
