GEOGRAPHICAL SITUATION
Halfway up the hillside, between 250m and 280m altitude, the Chevalières face due east. This area of Meursault, on the edge of the Auxey-Duresses finage, is planted with old Chardonnay vines over 50 years old.
CHARACTERISTICS
On a full slope, the soil is quite thin and the limestone slab is very close. The beautiful maturity is easily obtained and the wines combine tension and richness in mouth.
VINIFICATION AND MATURATION
The grapes are harvested manually in small crates in order to preserve the integrity of the fruit. The grapes are then gently pressed and fermented in barrels from our cooperage, a third of which are new. The maturation lasts about 15 months on fine lees before the preparation for bottling.
