GEOGRAPHY
The Côte Chalonnaise extends from the Côte de Beaune to the south of Santenay. This region has five village appellations, of which Mercurey, to the north, stands out as the most renowned.
CHARACTERISTICS
The vineyards surround the village, benefiting from varied exposure from south to east/north-east. Geologically, Mercurey's soils are a continuation of the Côte de Beaune.
VINIFICATION AND AGEING
The grapes are harvested by hand, using small crates to preserve the integrity of the fruit. The grapes are carefully sorted by hand and then destemmed. Maceration takes place in open wooden or stainless steel vats over a period of 3 to 4 weeks. The vats are regularly pumped over twice a day during fermentation. The wine is aged for around 18 months in barrels from our own cooperage, around a third of which are new.
