GEOGRAPHICAL SITUATION
From Beaune, Nuits Saint Georges is the first big village of the Côte de Nuits, just after Prémeaux Prissey and before Vosne Romanée. The two communes of Nuits and Prémeaux Prissey produce wines bearing the Nuits Saint Georges appellation.
CHARACTERISTICS
The soils are mainly composed of limestone and marl, and their perfect exposure to the East allows to produce superb wines.
VINIFICATION AND MATURATION
The grapes are harvested by hand in small crates in order to preserve the integrity of the fruit. The grapes are then carefully sorted by hand and destemmed. Maceration of the grapes takes place in open wooden or stainless steel vats for 3 to 4 weeks. The vats are pumped over twice a day during the fermentation. The maturation lasts about 18 months in barrels of our cooperage, of which about a third are new.
