Pernand Vergelesses Les Combottes 2020 - Louis jadot
Great Bourgogne estate
90/100 Parker
When to drink this wine : 2021 - 2033
Tasted by William Kelley in 2022: "The 2020 Pernand-Vergelesses Les Combottes (Domaine Gagey) reveals areas of pear, candied citrus, white flowers and vanilla bean. Quite powerful, taut and tangy, with a nicely concentrated core of fruit and a fine cut, it is built to age gracefully."
The estate tells you about it:
Cellaring: 5-15 years, depending on the vintage
Serving temperature : 12-14 °C
GEOGRAPHICAL SITUATION
This pretty vineyard is located at the top of the village of Pernand-Vergelesses, facing south-west.
CHARACTERISTICS
This vineyard is located on a secondary basement (young Jurassic, about 150 million years old) and is therefore limestone with a surface soil rich in oxides, particularly iron, which gives it its brown limestone.
VINIFICATION AND MATURATION
The grapes are harvested by hand in small crates in order to preserve the integrity of the fruit. The grapes are then gently pressed and fermented in barrels from our cooperage, a third of which are new. The wine is aged for about 15 months on fine lees before being prepared for bottling.
PAIRINGS
Mixed salads, soy salad, seafood, fish and chips, sushi, egg rolls, ceviche, salmon tartar, vegetarian cuisine: courgette fritters, vegetable tians, wok noodles, vegetable pies, fennel, vegan burgers, vegetable tempura, chicken yakitori, escargots à la bourguignonne, eggs en meurette, parsleyed frogs' legs, goat's cheese.
