GEOGRAPHICAL SITUATION
In the south of the Côte de Beaune, Santenay extends its vineyard over 378 ha of which 124 produce Premiers Crus (11 climats).
CHARACTERISTICS
The soil is clay-limestone with a more marked limestone resurgence in the upper part of the village, including the "Clos de Malte". Well irrigated. Located at the foot of the Mont de Cène (Mountain of the "Three Crosses"), in a small valley, it is thus perfectly exposed and protected from the winds. This 7 hectare vineyard is the property of property of Maison Jadot since 1993 (5.5 ha of Pinot Noir and 1.5 ha of Chardonnay).
VINIFICATION AND MATURATION
The grapes are harvested by hand in small crates in order to preserve the integrity of the fruit. The grapes are then carefully sorted by hand and destemmed. The maceration of the grapes takes place in open wooden or stainless steel vats or stainless steel vats for 3 to 4 weeks. The vats are pumped twice a day during the fermentation. The ageing lasts about 18 months in barrels of our cooperage, of which about a third are new. are new.
