GEOGRAPHICAL SITUATION
Savigny les Beaune is a village situated to the north of and adjacent to Beaune, benefiting from a wide variety of exposures.
CHARACTERISTICS
Two slopes face each other: South/South-East and East/North-East. They are both located between 220 and 360 m in altitude. The limestone soils are gravelly or stony, light and not very fertile. Maison Jadot's red Savigny les Beaune is produced exclusively from Pinot Noir grapes.
VINIFICATION AND MATURATION
The grapes are harvested by hand in small crates in order to preserve the integrity of the fruit. The grapes are then carefully sorted by hand and destemmed. Maceration of the grapes takes place in open wooden or stainless steel vats for 3 to 4 weeks. The vats are pumped over twice a day during fermentation. The wine is matured for about 18 months in barrels from our cooperage, about a third of which are new.
