GEOGRAPHICAL SITUATION
On the top of the hillside, this Volnay is located on cool, thin, marly limestone soils that produce balanced and very fine wines.
CHARACTERISTICS
A brilliant ruby colour, the nose reveals notes of white raspberry and grey pepper. Slightly roasted notes accompany the fresh fruit with discretion. The palate is very fresh and the tannins are finely chiselled. The whole is well balanced with a very interesting ageing potential.
VINIFICATION AND AGEING
The grapes are harvested by hand in small crates in order to preserve the integrity of the fruit. The grapes are then carefully sorted by hand and destemmed. Maceration of the grapes takes place in open wooden or stainless steel vats for 3 to 4 weeks. The vats are pumped over twice a day during fermentation. The wine is aged in barrels for about 18 months.
