Tasted on June 29, 2022 by J.S.: "Aromas of saffron, white pepper and dried fruit, such as lychee, follow through with creamy tannins and a fruity finish. Nice roundness and subtlety. Based on the 2017 harvest. Dosage 8g/L. Disgorged in March 2022. Drink now."
Tasting
A Mailly-style cuvée that combines, with great precision, the delicate freshness of citrus fruits with a velvety maturity carried by notes of roasted exotic fruits and ripe wheat. The mouth shows a softened vivacity: the flesh of the wine becomes unctuous, awakened by the energy of citrus fruits. The balance continues in a slender way on a finely spiced structure which confers a thirst-quenching saline finish.
Food and wine pairing
Its suppleness and fruitiness are wonderful as an aperitif. It accompanies foie gras in all its forms. Seafood, scallops with fleur de sel, turbot roasted in beurre blanc and fine poultry are also good matches. Dare to invite it also at cheese time.
Technical data
- VARIETY : 100% Pinot Noir.
- VINIFICATION : Manual harvest, first press, exclusive vinification in vats and barrels. Reserve wines matured in tuns (solera). Aged on laths in traditional pigeon houses.
- ASSEMBLY : Wines coming from identified places, most often on a northern slope, have been chosen to compose this cuvée and reveal the magnificence of the great Pinot Noir of Champagne Mailly.
- DOSAGE : 8 g of sugar per liter.
