- Tasting notes: A wine that expresses the Cistercian rigour from which it comes? No, it's more like a refined gentleman's wine: the grapes ripen early and nevertheless produce wines of great finesse, with a lacy texture and good length.
- Laying down: The complexity inherent in a Grand Cru can be felt quite quickly, and the wine is easy to approach. It can be drunk young, but its longevity is surprising and provides some fine moments of tasting, rewarding patience. Ageing: This wine responds well to new oak, particularly Tronçais wood. It finds its balance fairly quickly and sets the tone for the vintage, although a little longer ageing brings out its depth.
- Vinification: Clos Vougeot is still a ripe wine, with a fine texture. Vinification will be more extractive than average (e.g. punching down) to obtain a little more length.
- Vines: Immense work for the roots, which have to go very deep to feed themselves: how far down does the part planted in 1920, which represents around a third of the plot, go?
